If you are looking for a stronger graphics card and are not limited by the lack of and HDMI out, you might want to look into the new latitude 3540. It has an HD8850m. It does come with an i5 4200 CPU but this is usually not a problem for most people.

The Precision M6800 can be retrofitted with a better GFX card since it's got a full-size MXM slot in it. The M4800 has a half-size MXM and there aren't many options for replacement cards out there.

No, the Latitude E6430 (or any other Latitude model) graphics card can't be upgraded. The only choices are the standard Intel HD 4000 integrated graphics or 1GB NVIDIA NVS 5200M dedicated graphics card. Anything more powerful than the NVS 5200M would start causing thermal control issues (overheating) anyway. The cooling system for the 14" chassis just isn't designed to dissipate the heat from anything more powerful...

The NVIDIA NVS 5200M and the E6440's standard Intel HD 4600 integrated graphics are very similar in terms of performance. I haven't seen any performance stats on the E6440's optional AMD Radeon HD 8690M dedicated graphics yet.

What sort of graphics capability do you need? What GPU-intensive tasks or programs do you plan to run?

My Latitude 6430u has the Intel HD 4000 graphics chip (paired with a ULV i5-3427U processor) and it has plenty of power for everything I've thrown at it. Everything from photo editing, video editing and transcoding to streaming 1080p video are no sweat! Just fyi.

As an Engineer's desktop supplement, the uses that you said plus a touch of Cadd not to mention a current game on occasion.
I just like to try to have the opportunity to swap things out to futureproof as much as possible.
I thought that perhaps models with optional GPUs might take replacements but didn't figure on the thermal load.
