I'm looking to buy xp to install on my macbook, and a version I see for sale is Windows XP OEM. What does the OEM mean? Is it ok to use on a macboo?

Yes. OEM is a retail version without all the boxes / documentation and whatnot. In fact, you can only buy Windows Media Center Edition (XP w/Media Center Addon) in OEM form.

Pretty much same as all Xp's but you can't install it on any other computer and it possibly won't work if you upgrade some important parts in you MB
