I was just wondering, if you install Office on a computer with the activation key that came with the box and then uninstall and install on another computer, will it work? Or is it one activation key per installation attempt?

It will work. You are only allowed to have 1 active installation per key. You can uninstall and re-install and if you have any issues, you can call MS and have them help you activate it again.
