Also, Notes doesnt sync with my IPAD, which is a major pain in my a$$.
    I am using Outlook 2010.
Do any of you use Evernote and if so, does it integrate with Outlook? I really dont want to have to use an entirely different interface/GUI, just for my note-taking.

    Any other thoughts are welcome.

    Thanks!

Which version of Outlook are you running? 2007, 2010, 2013?

I don't use Evernote, but I do use a bit of OneNote and that works pretty well. Since it's a Microsoft product, I'd be very surprised if it doesn't integrate with Outlook. And it does work with an iPad too (I have mine sync'ed to my touch); OneNote should be in the iOS store.

I was going to make the same suggestion: OneNote it is.

I've read mixed reviews on EverNote, despite it's increasing popularity. I would second the above suggestion for OneNote, as I have yet to really play around with EverNote (I almost downloaded for my Android phone, but it was more than what I needed at the time).
