Is there any software that will let me add more gestures to the touchpad other than the ones my touchpad driver gives me? Things like three finger pinch to preview all open windows etc.

If you've got the Synaptics touchpad, try their latest drivers.
The ones that came with my lappy originally were very limited. Despite my touchpad is multitouch, old drivers didn't let me do any advanced stuff. Well, they were old (3 years now), so this summer I've downloaded the new Synaptics drivers. They are pretty neat. I can two finger scroll now, zoom in/out, can pin shortcuts to the software in the corners of the touchpad. There are a lot of cool features.
