I'm not sure if Norton 360 can only back up files, or if it can create drive images.

Basically, I'm debating which backup + security software to use.

Norton 360 does not create drive images. It will only backup files and/or folders.

Which is the better of the two: Acronis or Ghost?

Acronis is child's play to use. No manual necessary.
