    I've read that MSE is supposed to disable windows defender, is this true?

    I ask because after installing MSE on my family's pc, I notice that windows defender is still running (this is on windows 7 pro).

    You mean in the Security Centre or in running processes?
    Defender gets uninstalled (XP) or disabled (Vista/7), depending on the WinOS of choice after installing MSE.
    The process (name) will reappear because an enhanced version of Defender is incorporated into MSE, that's why you'll see a process running with the same name as the old Defender.

    MSE should disable Defender on Vista/7.
