I have my microsoft security essentials anti-virus set to update new virus and spyware definitions automatically though on a daily basis i also have (optional) MSE updates available in my windows update.....are these just redundant updates that have already been updated or is MSE not updating like it should?

MSE will update automatically, working in conjunction with the Windows Update service and using the exact same update you see in WU as optional. So, those updates you see haven't been installed yet, but they will be, eventually. If you want you can manually install them earlier, of course, either via Windows Update, or via the Update buttoon in MSE. The result will be the same.
