I'm curious as to what the highest level of encryption I can use would be in order to protect data in single folder, 10GB at most.

Edit: Priority being level of encryption, and performance after that. I have AES instructions if that changes anything.

    edit2: What about this? http://chiave.codeplex.com/

Or are there more secure methods? I assume this won't take advantage of AES instructions (AES is limited to 256 right?)

As far as I know there isn't (except maybe an AES 512 and 1024 coming soon) and there is no need for now except against a quantum supercomputer, as the weaknesses are somewhere else. For instance, the password strenght is as important as the encryption algorithm used. It's like building fort knox but leaving the main door open.
It would be better looking for device like this

There are still some good encryption software
    CryptoForge Encryption Software
2048 bit file encryption software for Windows 7, Vista.
but they all use AES 256 bits or a cascade of cipher like truecrypt does and does well.
By the way, truecrypt reach a 768 bits encryption level with some artificial process, the 768 bits key being divided in 3 parts each one going through an algorithm 2 times.

here is an AES 512 bits encryption level software
