I recently received a shiny new P770ZM-G from HIDevolution with the optional Xeon E3 1231 V3.
I chose the Xeon because:
*No IGP (didn't need it)
*Lower TDP (less power needed, less heat)
*Saved $100 over the i7
Anyway... I grabbed my SSD from my current i5 Z97 desktop and ran windows 10. It wasn't much of a stretch because the mainboard had the same chipset. In Windows 10 I had no G-Sync options at all. I downloaded the latest driver even though my other system has a 780ti, but no luck. I was not able to natively select 75Hz refresh either. So at this point I wiped the SSD and reloaded with Windows 7. I ran all the updates and drivers but still NO G-Sync or 75Hz without a custom resolution. I contacted HIDevolution Friday but they said they would need to open a case. I haven't heard anything from them. I also tried Nvidia's support chat but the guy was pretty clueless.
I read on the forum that a user ran into the same issue and that the build swapped his CPU out and it started working.
So just now I took out the Xeon and installed the i5-4690K from my other desktop.....
And immediately I could select 75Hx refresh and the G-Sync option is in the Nvidia control panel.
TLDR
Don't buy a G-Sync mobile laptop with a desktop Xeon CPU

I'm sorry to hear that didn't work, but thanks for posting that. I hadn't heard that yet, and it is good to know for others looking at a similar set up. If you hear anything back on how to make that work, keep us updated please.
