I practically swear by UltraVNC to control a headless windows 2003 server.
If you want VPN, use hamachi. Great combo, and free too. I have used hamachi to go through 2 firewalls.

I thought UltraVNC was an Any OS to Windows VNC solution. Doesn't it still have JavaViewer?

Yes, last time I checked, it still has the Java Viewer.
Also, it can hook up to other VNC software on other platforms like Linux.
With regard to UltraVNC being bandwith intensive, lowering the color settings and resolution can help to a degree. -
Sorry to come in on this conversation so late. I'm not very familiar with these applications, but I have used UltraVNC. I started using UltraVNC in combination with PalmVNC to remotely control my PC using my Treo 755p (in fact, I think I originally set it up with my TX). A recent upgrade of UltraVNC (not sure it's the latest version at this point) was such a performance hog that I could barely use it with PalmVNC. As the previous poster said, lowering the color and resolution settings helped. Lowering my exectations helped, too.
UltraVNC has been handy. I also use it with my netbook. I recently switched to a Windows Mobile phone (Sprint TP2), and I'm looking forward to trying it. Remote control isn't something I need often, but it's nice to have. Being able to do file transfers has been handy, too.
I have not been using a VPN connection. I suppose that's a good idea. Thanks for recommending Hamachi. I read about that at Lifehacker.com some time ago, and have been meaning to try it out. -
