I am looking for one that will not impede sensitivity, not yellow soon, and if possible, also not scratch easily. Has anyone around here any experience with touchpad skins?

Just an idea, mayeb you could get one of those screen protectors for iPods (makes no difference in sensitivity to my ipod touch), etc and cut it to size and stick it on? :p

Touchpads are great, sensitvity wise. I have 9 layers of paint and 3 layers of variagated copper leaf, and 4 layers of clear coat, and it works perfect.
Well even with all of that paint, the touchpad is still sensitive, so on yours you should have no loss of sensitivity even with a thick protector.
