How is your modem configured? You may have opened the ports on the Linksys, but if your modem is also doing NAT you could be getting online but the actual ports are still blocked.

Check the WAN IP in your Linksys 3000 and see what the IP is. If it's in the 192.168.x.x or 10.x.x.x range, your modem is also doing a second level of NAT in addition to what your router is doing, and it is what is causing the problems. Disable NAT on the modem, and you should be good.

Well I guess I have another question. I kept losing connection to xbox live randomly so I setup a wired connection through my laptop. For a few days, I also had a open NAT but it keeps changing back and forth every few days. I looked at the bridge I made and it mentions something about a lease being obtained and a lease expiring every few days. Could this be the problem?

I have an E3000 and with UPnP enabled the 360 says it has an Open NAT.

Before you try to do port forwarding, try restoring your xbox360 network back to default. You can do this by going into network configuration.
