I cannot comment on the Tiamat, but from everything that I've read the 5.1 and 7.1 surround sound headphones are pretty much a waste of money. It's a marketing ploy to increase sales, and I personally own the Razer Megalodon and have no reason at all to turn on the 7.1 mode. In fact I think the 7.1 sound quality is garbage. With head phones, the speakers are obviously right over top of your ears and thus, there is not enough room for the speakers to project the sound and give a true 5.1 or 7.1 sound quality. A nice set of Audiotechnicas, Shure, or really any sort of "audiophile" headphones will do great to give the illusion of surround sound (look for headphones that are marketed as having a good sound stage).

That of course is my opinion. You can look online at places like head-fi.org and that can lead you to good resources and reviews. Also keep in mind your sound card, amplifier and all that other fun stuff.
