I am confused about the audio jack setup on my GT70. I have 4 jacks: headphones, mic, line in, line out.

Does this mean I can connect a 5.1 surround sound headset, such as the Turtle Beach Z6A? I just purchased this headset, but I can't figure out how to connect it because its cables are labelled "Front, Mic, Rear, C/S" which doesn't at all seem to correspond to "Headphone, Mic, Line In, Line Out"....

Yes, you can, see attached image for connection mapping, or you can also download the manual from the link below.
    Refer to Page 18-19.

Thank you! I followed that wiring diagram, however, it results in the microphone being left unplugged since the mic jack gets used for the subwoofer/Center speaker.

But tell me something. The GT70 has sound blaster cinema, which, according to Msi's web page, allows you to experience surround sound with a stereo headset. So is there any reason to connect a surround sound headset to the GT70?

It is normal since mic isn't used.
What you are doing is real surround, but what Sound Blaster Cinema provides is virtual surround.

Do you know how to benefit from the virtual surround sound using a stereo headset? It doesn't seem to work for me and I mentioned there may be a problem with the drivers in a different thread:

    Try this.
Open up Realtek HD Audio Manager, then click on the drop-down of Speaker Configuration, default is Stereo and select 5.1 or 7.1 Speaker. Click on the Play icon on the right to test.

When I do this using stereo headphones, I only hear only Front Right and Front Left, then all the other speakers don't make any sound.

When I do this using my surround sound headset (which plugs into all the audio jacks and bypasses the Sound Blaster virtual surround sound), I hear Front Right, Front Left, Center, Subwoofer, then when it tests Rear Right and Rear Left, the sound ends up being the same as Front Right and Front Left, so the whole Rear end of the surround sound is missing.

I know I'm talking about 2 completely different and unrelated problems in this post.

Sound Blaster Cinema's virtual surround sound actually does not work! I've tried connecting a stereo headset, changing the settings to 5.1 and playing a surround sound game like C.O.D. but alas, there is NO surround sound. Have you ever successfully experienced surround sound produced by Sound Blaster Cinema while using a stereo headset?
