I'm trying to find a way to use my wife's Surface Pro 3 with 3 monitors WITHOUT taking up a USB port if possible.

Is there some way display port can be used to get multiple monitor support going?

You can daisy chain multiple monitors, but that limitation will depend on what resolution your 3 monitors are running at. I'd refer you to the following link on displayport to help you out here.

Alternatively, you can buy a surface dock (there are multiple versions) that supports multiple displays and use that option in conjunction with the built-in mini-DP port on your surface pro 3 to drive 3 displays.
