I feel like this should be ridiculously simple.

My ThinkPad has a jack that doubles as a microphone and audio out.

On my old HP Envy you could pick which function you wanted in the HP sound control panel.

I can't find were to set the option on the ThinkPad...

    Any ideas?

I got tired of screwing with that jack, too. Went USB.

I have a 2 years old Logitech USB Headset, good sound output and the most importantly I never experienced any problems from it. :D

Why do you want to choose either one of the functions? It can be both at the same time. Go buy a set of decent in-ear headphones with built-in microphone -- I recommend MEElectronics M9P. It will work with the combo audio jack, the sound quality is terrific, and you can find it for around only $15 (or less when there is a deal).
