I want to be able to use my T61 screen and two external screens. How do I go about doing this? I have an advanced docking station but it will only let me use two screens at a time.

The Quadro 140M, like most notebook GPUs, is only a dual head card. As such, it will only support two displays simultaneously.

You can either use both externals and turn off the ThinkPad display, or you can buy a device like the Matrox DualHead2Go that makes your GPU think that two displays are in fact a single device.

Maybe a USB Video card will also do the job for you. eVGA makes ones.

I just added a video card to my Thinkpad Dock. The card has 2 ports on it for DVI and VGA and it was like $50 bucks...Have my T61p screen up and 2 external displays going. I can do one more because I can have my Thinkpad display as 1, the built-in DVI dock connector 2 and the additional video card for 3 and 4. Haven't tried 4 yet, only 3, but it works great. And the T61p I have also hot docks which is nice (my W500 BSOD's).
