The Lenovo y500 has the red backlight. The y580 has the white backlight.

Does anyone like one color better than the other?

Well I'm sure there are practical reasons for choosing one over the other. For example, red would be less intense for the eyes under low light conditions, while the white would be glaring with the reflection from the glossy screen of the Y580. I would think anyways. Personally I would choose red just be it looks cooler to me, and it's more unique.

Aside from just colors, I heard that there's only one brightness setting the Y580 while the Y500 has multiple brightness settings. Hope that isn't true...

The y580 has two settings: on and off.

The y500 has three settings: low, high and off.

That being said I think the backlight color is a matter of preference. Do keep in mind that red is easier on the eyes in low light settings.
