Does anyone know if the X200 can take 2x4GB RAM (assuming a 64bit OS)? In the specs and on the Lenovo website 4GB is stated as a maximum but the chipset seems to support 8GB ...

    Any ideas?

The chipset (GM45 I think?) definitely supports 8GB of memory.

The Lenovo datasheet for the X200 only states what they offer for sale, not what the notebook actually supports. For example, the fastest processor listed is the P8600 but the X200 definitely supports the P8700. Same thing for HDD/SSD.

So to answer your question, AFAIK the X200 will support 2x4GB.
