I'm assuming it is the Gateway P-6860FX? If so, you can pick up a cheap ES x7800 off ebay ~$200. Many users have upgraded their 6860's to the x7800, check out the Gateway forum.

The best available for the 6860 is the x9000. However, the x7800 can be had a bit cheaper(I got mine for $225) with almost the same performance. The current GW BIOS limits overclocks to 3ghz, which both do with ease. The X9000 does run cooler, however. If money were no concern, I would get the x9000.

Ok I've narrowed it down to 2 processors...
    The T9300 and the x7800...
do either of them require that I upgrade my fan as well or can I just replace the CPU and everything be ok?

You just need to replace the CPU.
If you're into Overclocking, get the X7800, otherwise stick to the T9300.

It's not good to stress the cooling system, by running the X7800 OCed to 3.0. IMO 2.5 vs 3.0, you won't notice a difference in overall performance.
