I've been looking around, but I can't seem to find any definite answers.

I'm looking at possibly getting a new system, and found a couple in my price range. However, one has a slower 6 core (AMD Phenom II X6 1035T 2.6GHz ) and the other has a faster 4 core (AMD Phenom II X4 965(3.4GHz)).

Which would give better performance in gaming/video rendering?

And how can I tell when comparing other similar situations (not with the same processors, but still "faster quad vs slower hex").

The hexacore will do better in video rendering, the quadcore better in gaming. This sounds like a desktop question, though, so it's probably going to get locked soon.
