My apologies if this has been answered recently. I've been away for a bit...
I have a 160GB Intel X25M G2, and lately I've started to experience what I think is stuttering. Things like an occasional several-second delay when I do something like type into a message box on a board like NBR's.
Is there any maintenance that I can do on an Intel SSD? Does its garbage collection require it to be left alone, unused, for a given length of time?
Or should I just live with it for a couple weeks, until I receive Windows 7?

AnandTech and PCPer have good information on working with SSDs, and both sites have done work that directly resulted in changes to Intel SSDs.
I can't remember if there is a TRIM utility for Intel SSDs, if you read AnandTech or PCPer, you'll find out. Running that utility should improve performance significantly.
Otherwise, when you finally get your hands on Windows 7 (October 22 is so close!), the OS will automatically send the TRIM command to the drive, and you will never need to do any maintenance to maintain great performance. -
According to the Anandtech article, the Intel gen 2 drive is a little bit worse in restoring original performance compared to gen 1 drive, as Intel is counting on using TRIM to get the drive's performance back. They'll also release a manual TRIM utility for Windows before 7.

I have the envy 15 with g1 ssd drives in raid0. I also have windows 7. Is there any maintenance I need to do or does Windows 7 automatically do it?

First thing you do is quit RAID'ing after that no not much you need to do. -
u cannot use trim in RAID 0... stop doing so then try TRIM and seriously , RAID 0 is waste of space and money.. A single SSD is already fast enough.. RAID 0 wastes ur money.. and u can't do any maintainence so u know what to do..
