So I finally ordered an XPS M1210 with the 60GB 7200RPM hard drive. Is there any way to determine if the HD is really 7200 and not 5400RPM?

Yes; go into My Computer, right-click C:\, Properties, Hardware tab, and then look at the Disk Drive. Copy down its name (ex: HTS721010G9SA00 ), put it in a Google search, and you should be able to find out what drive it is.
