Which is better ?
Intel core i3 - 380M , 2.53GHz
or
Intel core i5 - 2410M , 2.30GHz
and is it a big difference ??

The difference is a platform from early 2010 vs. a current one (~45% difference).
No doubt about it: if you're buying this to last for more than a few months, get the latest platform available. -

Don't let the difference in clock speed fool you, as said previously, the change between the first and second gen of core i did make for a nice performance boost between the two. Get the i5 if the rest of the notebook suits your needs.
EDIT: Oh and by the way, not all engineering software can be considered intensive and for some it depends on usage. -
The i5 by alot,
its second gen and faster in alot of ways including turbo boost and it has hyperthreading wow

Not only is the 2nd gen more efficient per clock, it has more aggressive turbo modes, this means it can raise it's own clock if needed.

Even without Turbo or TurboBoost disabled the i5-2410M would be faster. The i3-380M is only slightly faster then i3-2310M. Not only is the i5-2410M faster then the i3-380M it's also more effective and boosts a more powerful IGP (HD 3000).

In general it's safe to say i7 > i5 > i3 of the same gen

Agreed. The i5 is going to be better. Although i would suggest an i7 if your'e going to be doing gaming and engineering design etc. I use my G73 for it and quad does help.

Well, it depends on what you do, for gaming, a quad is better, but an i5-2410 will still do quite nicely. When it come to engineering like CAD design, those softwares like quad cores.
