    Hi there,
Intel have a lot of processors.
    You can see here:
    http://processorfinder.intel.com/List.aspx?ProcFam=2643
Look at the T7800, there are 2 types: SLAF6 and SLA75

Could explain about the "Mfg Tech", "stepping" ?
How about the processor code Txxxx? How is the rule? the bigger number does not mean faster speed ?
Between T7100 (1.80) and T5600(1.83) which is better?
    Thanks.

A stepping is a minor change.

It is what it is! You ask if a 1.8 vs a 1.83? Well what is FSB? Is there a diff? look at lith's guide.

Dont just look at the clock speeds, but look at cache memory and FSB too.

    T7100 is 1.8GHz, 800MHz FSB and 2Mb L2 cache,

    T5600 is 1.83GHz, 667MHz FSB and 2MB L2 cache.

I'd expect the T7100 to have a miniscule advantage but they're pretty evenly matched. The T7100 is a newer socket though and can likely be upgraded to Penryn.
