I paid a small fortune for this laptop, and am waiting for my Pimax 8K headset to arrive in a couple of months (hopefully). The Pimax 8K uses DP 1.4.... The notebookcheck review says the mini-DP is 1.3.... But I can still use the main HDMI using a DP to HDMI dongle and take advantage of a DP 1.4 input, right?

The laptop 1080 GTX seems to support DP 1.4: https://www.notebookcheck.net/NVIDIA-GeForce-GTX-1080-Laptop.171212.0.html

If nothing else you should be able to use the HDMI if the correct dongle is supplied and their page says they will supply such a dongle. Am I making it too easy, in other words maybe there is an advantage to using the display port?

FYI HDMI 2.0 supports 18gb of bandwidth which provides 4k at 60hz and DP 1.4 supports double that so 32gb of bandwidth which provides 4k at 120hz. This would explain why the pimax 8k (true 8k without the built in image duplicator) needs DP1.4. In theory DB1.3 supports the same bandwidth (32gb) but I am not sure if it will support the 4k at 120hz as the specs state only up to 60hz but will support 5k resolution.
