I assume you mean RGB, which is not technically a connection type. You're probably referring to VGA.
DVI is digital...basically no noise, can carry higher-resolution signals, also carries content-protected signals for Blu-ray/HD-DVD.
DVI > VGA. -

If the monitor supports it (and the graphics card) DVI can enable "handshaking" between the monitor and computer which goes like this:
Code:Video Card to Monitor: "What resolutions do you support?" Monitor to Video Card: "Here ya go, this is a list of resolutions I support: 1680x1050 1440x900 1280x800 1024x640 800x500 And So On." Video Card to Monitor: "Ok, I'll pick the best one that'll work for both of us. 1680x1050 sounds good."
