On the dell site there are 2 chipsets listed. Do I need both for the 630m?

    Intel Mobile Chipset
    Ricoh R5C832

    Thanks

The Ricoh is the for the multimedia card reader controller and is separate from the Intel chipset. If you have a card reader then you'll need both the drivers.

The notebook system software contains the driver for the USB. So it will most certainly be needed if you want to use USB. The diagnostic utilities is not that important but might come in handy if you run into any problems in the future with the hardware. The applications software is again not that improtant but if you are reinstalling the OS and use some of those apps(especially media direct) then you might want that as well.
