I've read that the Dell Studio XPS 16 With Intel i7 gets slower when getting hot or gaming, but what about the Dell Studio XPS 16 with i5 processor?

The GPU in the XPS 16 throttles (gets WAY slower) when/if the GPU temperature hits ~84C (the CPU should never throttle even if you are an extreme gamer). The i7 quad does generate more heat than the i5, and I think your statement sounds like it would be true since GPU and CPU "share heat." I would think having the i5 would help the situation, but not eliminate any chance of throttling.
