The N80VN-A1 as far as I can tell is using the Montevina platform.
Can a T8300 (that I currently use on a Santa Rosa Platform) be used in the N80VN-A1?
Also, will this void the Asus warranty?
If I replace the CPU back to the original one before sending in for warranty work, would they know? (i.e. any special stickers or other signs they look for?)

They're both socket P, they're both 800MHz bus. Looks good to me but I don't know for sure whether it'll work in your N80VN-A1. The BIOS might not recognize it, so make sure to be on the latest version. The TDP is higher on the T8300 so it'd run hotter. If you replace it you must make sure not to damage the sticker that covers one screw on the CPU heatsink clamp thing. It does void your warranty technically to undo the thermal pad seal between the CPU and the heatsink.

OK........ If you send in your notebook for some work and, as part of their RMA work, tech support finds either 1) thermal paste instead of the stock pad on the cpu or 2) a non-stock cpu installed, it won't matter one little bit whether the warranty seals are intact, the warranty is void as the unit is no longer in factory-issued stock cpu condition - they'll either send it back directly, or have you provide payment before any services rendered (as they should, imo).
It amazes me how folks around here are occasionally offering hints on how people can attempt to commit warranty fraud and get away with it -- if you replace the cpu in your notebook with a new one during the warranty period, Asus' product warranty is void, immediately. Period, end of story. It's the choice one makes if that course of action is taken
