My half busted G51J is still chugging along as htpc. It's fans are a bit noisy so probably needs a dedust/maybe repaste. Hardly surprising after over 2 years lol.

Anyway to actually answer your question I've got Geforce Experience installing updates as they come out and have had no problems (even though nothing would have been changed for the gtx260m in the last 2 years at least)

Yes the actual code for the GPU is unlikely to have changed, just a couple of extra software bits and pieces have been added in.

Anyone upgrade their G51vx-rx05 to Windows 8 / 8.1 and see any benefits?

I've got my G50vt on 8.1... The startup/shutdown times might be a little faster but otherwise it's as expected. No regrets really, most Windows 7 drivers work just fine.

The 51vx died recently, it would boot into safe mode but would hang when booting into windows. Lacking fault-finding knowhow, I am flummoxed.
Can anyone suggest any process for nailing this or should I just say goodbye to the old girl?

In safe mode remove the graphics drivers. If this boots into windows normally (obviously at a lower resolution as no GPU drivers), you can try then putting new GPU drivers on it but it's likely the GPU is dead.

Is there another graphics chip I could install or would it have to be limited to an 260m I wonder?

Due to the slot and cooling setup asus uses there are no other options.

Mine died a couple months ago. Pulled it apart and dedusted and repasted everything, put it back together, and it refused to power up. I had trouble the last time and after an hour it worked and was fine for about 2 years. This time I cbf wiggling and bending things to try and get it going.

Sold the shell for 30 bucks because someone wanted the cpu. Double what I thought it was worth!

Well the ram and parts can be stripped down and used/sold which always have some value with a notebook.
