These problems are a bit strange. Try running Apple's hardware test by restarting your computer while holding the D key with the OS X DVD inserted. Check if it is indeed faulty RAM causing these issues.

Does it crash and throw up a report? Very weird. I would do a hard disk check and a preference repair for the hell of it.

    - Open Disk Utility (spotlight it)
    - Select your hard disk
    - Click on the "Verify Disk" button - this should pass with a green. Be patient as there will be no progress bar and your system will be completely unusable during that time. I always find it a bit unsettling when that happens, but... wait. Depending on how much data you have, it can take 10 minutes.
    - If that doesn't pass with a green, start from your DVD (restart computer, hold down the "C" key until you see the startup screen), then run Disk Utility again, and this time click the "Repair Disk" button instead of verify. You can't repair a live startup disk, so you have to start from CD for this.
    - Once Verify passes (very likely), click the "Repair Permissions" in Disk Utility. Likely, problems will be found and fixed.

These problems do sound very strange.

I never had them because I did a nice and clean Leopard install after I upgraded to 4GB...

Yes, do the repair permissions like I said above. Permissions always get screwed up and that can cause all sorts of weird issues.
