I found, for my needs, that the must have apps are:

    Perian
    Flip4Mac
    Fairmount (requires VLC)
    VLC
    Roxio Popcorn
    MSN Messenger
App to silence the startup sound without affecting system sound - Life saver for me :) Found here
    ToDo widget
    NHL scores widget
    1Password
Apple Backup 3 - Free if you're a .mac member

I have a list of applications in the Mac Switcher's Guide, try them out! Also, there is a guide floating somewhere around the forum for best OS X Freeware.

Firefox (for those times Safari just doesn't want to work)
smcFan Control - temperature & control of fans.
iStat Pro - monitoring computer stats.
Cyberduck if you do FTP file transfers.
    Colloquy if you use IRC.

and.. that's pretty much the only applications I have on my Mac... I also run Photoshop, but that's not particularly necessary for the general user. :)

As for the comments on Quicksilver - I tried it for a week or so, and I found that I just didn't use it very much. But each user to their own I guess. :D
