I have a bunch of old outgoing mail servers. How do I delete them to more stream line it?

preferences -> accounts. click the drop down for the server list and click on edit serves. straightforward from there. hope that helped

I should have seen that. I do have another question. Where does it keep it's list of email addresses it shows as you are typing an email address?
It must keep a list somewhere. When I am typing an email address it comes up with a bunch of spam accounts and email address i never want to send mail to. Is there a way to trim that down as well? -
