start -> control panel -> date, time, language, regional options -> regional and language options -> advanced -> code page conversion tables -> add 20936 (Chinese GB 2612) and 54936 ( GB 18030 Chinese)

Works fine for me (I watch japanese anime in HD RAW format somtimes and it works fine in both QuickTime and VLC). Just make sure that when you install OS X, you do a full install, and not a custom one with all the language packs deselected.

I perceive OS X to be very supportive for languages. Years ago, when first OS X showed up a friend of mine bought a Mac because of the good localisation of japanese.
