Parallels allows you to run Windows inside MacOS. So, you can access MacOS and Windows at the same time.
Boot Camp requires you to restart your computer and then allows you to load Windows instead of MacOS. You will have to restart again in order to get back into MacOS.
Parallel currently has no 3D support, so you won't be able to run 3D hardware accelerated games. However, Boot Camp does have 3D support, so it is possible to game with that like you would on your PC.

I personally prefer Parallels (as I game on a seperate PC) because I would never restart MacOS X. The MacOS sleep mode works much better than Windows' bugged Standby or Hibernation.

Budding pretty much summed it up. The one thing I would like to add is that Parallels is planning on supporting 3d gaming. It may be a little while before they get there, but they are planning on it.

Parallels just makes it so much easier because you dont have to reboot. My fear in buying the software is that Apple may end up surprising us and incorporating a Virtual Machine like parallels into Leopard. Then that $80 you spent goes right down the drain.

I doubt they will. Apple is actually kind of pushing Parallels over Boot Camp. They sell Parallels in the store. To me that says that Apple is content with over Boot Camp and staying out of virtualization.

If Apple ever did that, it would be worse than NK testing atomic bombs... such a clear declaration of war... Really unlikely.
