Will there be any difficulties ill be running into? Ill be mainly transfering mp3, jpeg, photoshop and Microsoft word (doc) files.
Will all of these open seemlessly on the mac when theyre transfered over?

I have no problem moving files between pc and mac. As long as you have MS Office the word doc's will open seamlessly. Use iTunes to import the songs and all will be good. The same for iphoto.

You could even use Home Sharing through iTunes to copy your music and video files from your Windows PC to your MBP all through your wireless network.

None of Apple's computers come with trial software. In fact, the only thing that comes pre-installed on any Apple computer (unless you specified otherwise while ordering it) is iLife 2011 (Garageband, iPhoto, etc.), QuickTime, iTunes, Safari, the new FaceTime App (for the 2011 MBP models), Safari, and a bunch of small built-in Mac OS X app (Calendar, etc.). It isn't going to be like a typical Windows machine that comes with trials to 435683924759837945 different programs.

Sometimes I get Office docs that have been created on the PC coming over as "read only" on the MBP.
Can anyone comment on why this is happening? Is it a file permission thing? If so, why does this persist when coming over from the PC?

I would check the source first to make sure that the files are set to read/write and not read only. Second, you should verify that whatever program you are using on your MBP to open the documents actually works with that file format. For example, I can oped, edit, and save docx, xlsx, and pptx files with my MBP and Windows machines at home as they are all running at least Office 2007 (though my MBP has Office 2011). However, I can take those files over to my work computer (which is still rocking Office 2003) and I can only open and view the files. I have to save the files as standard doc, xls, or ppt documents first before I can fully edit anything. It has to do with the plug-in that the IT department installed on my desktop in Office 2003.
