I dont have my Time Capsule just yet, and am looking to set up Time Machine to an external USB HDD.

If I dont have the external drive plugged in, does it just skip the scheduled backup its missed?

Can I just create the initial full backup, then stop the scheduled backups - so only have it incrementally backup when I manually run it?

    Yes

You don't need to stop the scheduled backups (but you can). Backups won't happen unless the drive is plugged in.

To further Khris is response, you can turn Time Machine to manual back-ups only. And yes, when you do finally do a back-up is it incremental only. Even though I have my TM back-ups to my NAS I run it manually since TM's automatic back-up setting is very aggressively scheduled and OFTEN (ie: resource heavy).

Thats exactly what Im thinking - every hour is probably a bit over the top for me. they should really have made the schedules customisable!

its made to set and forget and not be complicated.

Every hour isn't a big deal... for most users. They have little change in an hour. For some users though, that can be a bad thing to do every hour. Me, I just make sure i back up every day, and don't let it go all the time unless I'm actively working on something I don't want to lose.
