The icon that you see for the Untitled disk is actually the NTFS partition with Windows installed on it. Macs can read from, but cannot write to, Windows NTFS partitions. So this is probably why you can't do this. Personally I didn't change the icon for either Mac or Windows partitions.

If you open Finder, then go to Preferences, in the General tab you can select "Show these items on the Desktop". You can hide disks, DVDs, etc.

That will hide your Mac OS X (HFS+) partition, but will not work for a Windows (NTFS) partition. You can however Eject (Unmount) your Windows partition. Right-click > Eject; you'll need to do this after every Restart though. Maybe there is a better, more permanent, solution to hide the volume?

To rename your Windows (NTFS) partition, boot into Windows and rename your C drive.

To change the icon of the Windows partition, follow this guide.

For anyone that is curious, Mac 101: Change Your Icons.

EDIT: Apparently you can hide the Windows volume using "SetFile" from the Developer Tools. Follow this guide. I have not tried this. I access my Windows partition quite frequently, so it's convenient to have it on the Desktop. Does anyone have any other solutions?
