When I go away for work travel, I need to have access to my PST files that I bring along. On my old T60, I used a cracked version of Outlook 2k. It was clunky, but did the job. Are there any Mac-based programs that will let me view my PST files and pull out any attachments or emails I may need?

You could use Emailchemy to convert them into standard mbox format which you can then import into Apple mail.

That's what I did with all my PC PST files - flawless.
