doesnt matter what brand ram it is. just make sure ram is compatible with your system.

I would do a search on Corsair, make sure it will run. I have heard some reports that it does not, but double check. Newegg is a good place to look because someone has usually tried it on a Mac and reviews it. But yes you do not have to upgrade both at once. I myself did one stick and got the other a few months later.

Depends on whether you have any free RAM slots in your MBP. If you have a free slot, then you can just buy RAM from Corsair and stick it in. Otherwise it is probably best to buy 2 sticks of 512MB from them (assuming you have 2 x 256MB in it at the moment).
You could always return the RAM or exchange it if it's not compatible (most RAM is compatible).

Just to clarify, the stock MBP's either have a single 512MB DIMM on the low-end config or a single 1GB DIMM on the high-end configs. It's only the MacBooks that ship with 2 256MB DIMMs standard.
