So I ended up returning the 1.4Ghz, 2Gb, 128Gb SSD MBA for the 1.6Ghz, 4Gb, 128Mb SSD model primarily because I could not take the limited memory especially when using a VM which I have no choice on (for work)...
The extra memory is a huge improvement when running Windows in a VM.
The Xbench comparison of the two is pretty much as expected:

The rep at my local Apple store (Westchester NY) was very gracious with the exchange and waived the restocking fee... aren't they great?
I am very happy with it now.

I'm also planning to use VM so will choose 4gb. Do they actually have 1.6, 4gb 128mb model instore? Maybe I'll just pick one up from the local Apple store rather than order online

    Yes they do... :)

I used Migration Assistant right off the bat so I never actually saw what you get out of the box... However in my case I have 61.08 Gb free including my ~24Gb iTunes collection... not too bad...
