Random question- I love how I'm always logged into mac mail but it seems like there should be some way to "log out" especially if you are traveling and want to keep emails secure. How do you log out of mail?

Mail is your desktop client application so you really don't log out of it like a web app. To log out you would have to log out of your desktop session. If you want protection you have to remove your password in accounts and it will require a password each time Mail is launched.

You can take inboxes "Offline" in Mail.app (right click an inbox and select Take Inbox Offline, or click on Mailbox>Take Account Offline). That is quite similar to logging off. Not sure if that's what you're looking for.
