I went to System Prefrences and then to Security.
Do I want allow only essential services or Set access for specific services and applications?
I set it for specific servies and applications but all of my programs just start as normal. Out of all of them the only one I was asked about was Adium. skype, firefox, mail, safari, etc just start and accept traffic both ways?

Well, I bet your OSX native applications will accept all inbound and outbound traffic regardless of how you set your firewall...they'd probably fall under "essential services".
Apple isn't known for configurable options, and that certainly seems to hold true for their firewall -
Silly mac's... you don't need firewalls
Yea, you want to set access for specific services. You should leave it how it was though, apple usually has those settings right from the get go so you shouldn't worry. -
As much as I like Apple, they seem to have a rep for doing horrible batch 1 releases -
So I should have it set to only essential services?

I had it set to only allow specfic servies. It let everything through that I could find. Does it actually block anything?
