I keep hearing the term "jailbreak", but don't know what it is. I googled the term, but got so much information it confused me.
Could somebody tell me what "jailbreaking" is and why one would or would not do it. I have a new Ipod Touch 8gb. Its a v2.

Jailbreaking is for the iPhone (not the iPod Touch), and it allows iPhone's to work on non-AT&T networks.
Now, no more discussion of that. But you don't need to worry about it. -

But when I google it, I get a bunch of results that include the ipod touch. Hmm. -
Jailbreaking is irrelevant now. The app store does what Jailbreaking used to do. So on a touch, its useless.

Jailbreaking allows you to install additional software (apps) that you wouldn't find in the AppStore. One good example is Cydia (the central jailbroken AppStore) and its Winterboard which enables skinning for the iPod touch and iPhone. There are TONS of apps you find in Cydia but don't in Apple's AppStore.
Also, please do note, that jailbreaking your device is completely legal, unlocking iPhones is not.
The only drawback from jailbreaking is that if anything were to happen to your iPod, Apple will waive your warranty. So think about that... -
I did jailbreak my itouch, it's very nice because as cdnalsi said, you can install a loooooot of applications and themes. And it's very very easy to do it (it wasn't at the beginning)

The 2nd generation of the ipod touches havnt been jailbroken yet. Now that the 3g iphone has been jailbroken, its only a matter of time until the touch is jailbroken as well.

I hope so sulkorp. Feels like it will be at least a couple of months in my opinion. I hope I'm proven wrong.
