I'm curious on if I leave the iPod Touch screen on all the time on if it suffers from screen burn if the display doesn't change for a long time, like when showing the home screen. I know it drains the battery quicker, but I like knowing it's on when playing music.

Pixel/image retention is about the only thing to take place.
Kind of like burn, yet it will go away over time

I believe modern LCDs are pretty good about burn-in now; plus, doesn't the iPod Touch have an automatic screen shutdown after a minute? That may be the default setting at least...but that would make sure it doesn't happen.

Yeah, the iPod Touch does have that feature to turn off the screen after a minute or up to 5 minutes or never. Only thing is I wish I didn't have to do the slide to unlock the iPod Touch, go to the Music section, then switch to a different track.

As I was typing this I fiddled with the options and found that you can setup the home button on double-click to take you straight to the iPod controls, bypassing that lock. To activate this somewhat hidden feature, go to Settings | General | Home | and then change the "Double-click the Home Button for" to iPod. It's now a time saver, as when it's locked you can double-click the home button and it'll show the iPod controls on screen.
