I'm thinking of getting a MacBook. I have a 160 GB SATA 2.5" laptop drive sitting around collecting dust. Will it be possible to put that in to my macbook and replace the 80 GB drive?

Yup you can add any sata 2.5" hdd to your macbook. I took my dad's 120GB from his toshiba laptop and swapped it with my stock's 80GB. Quick and worked like a charm.

I too just upgraded my hdd. It was very easy, just remove the battery, then thin metal strip covering the memory bays (3 screws), and then gently pull on the tab for the hdd. Also I replaced it with the drive from a Western Digital passport II 250Gb. That is surprisingly cheap external, cheaper then even just a SATA drive if you shop around, and the bonus is that I then was able to use the case for my old internal.

Well, people have been severely misleading in this thread. It is not *quick* at all, unless you have a torq screwdriver, but it isn't difficult. You don't want the screws to run either, so even opening the drive/ram cage is a pain as the screws are tiny and there is no room to work in.
Take your time is all I have say. I picked up a new Macbook today and it is currently reinstalling OSX.
