Hello,
First, how do I close all open applications on my Mac, and how do I even tell what applications are open? Secondly, before I install Vista, it says to backup your computer...how do I do this? Any help here would be much appreciated.

Applications that are open have a black arrow under the icon on the Dock. You can also press Apple + Tab to cycle through open applications. The Finder will always be open.
So if you're using Safari to surf the web, then under the Safari icon on the Dock you'll see a black arrow. That means the application is open.
Closing the window does not quit an application, like it does on Windows. To quit an application right-click the icon on the Dock and press Quit, or just press Apple + Q to quit the application you're currently using.
To backup your computer you can transfer your files onto an external hard drive or to a DVD, or to a large flash drive, etc. Basically, they're telling you to have backup copies of your essential files (photos, music, documents, videos, etc.) in case something goes wrong. -
You should probably print a copy of Apple's Boot Camp Setup & Installation Guide [PDF] before you do anything else!

Backing up pretty much means you need to have a copy of all your stuff should anything bad happen during the install.
