Using an old 2.16ghz c2d mbp here. no media keys like the newer macs.

how can i make it so I press certain keys to skip ahead or go back a song in itunes.

having to pull up the minimized itunes really sucks

SizzlingKeys is a great little pref.pane that does this for free. You can upgrade to a pro version, but the free version does pretty much everything u want for iTunes. I have been using it for ~1year without issues and its probably one of the best little app's I have installed.

the shortcut for next song and previous is apple + right arrow, apple + left arrow. Also apple +up/down will change the volume.

Doesn't work universally, but if you apple+tab to the minmized itunes, you can still use the shortcuts, without bringing up the window.

I've got a little app called "ByteController" which gives me little iTunes play/pause/skip buttons that sit in my Menubar, very very handy.
I haven't configured it, but I believe you can configure hotkeys to these functions, so with that you should be able to map those controls to any buttons you'd like, and have it work just like you had the media keys.
Bytecontroller can be found here: http://www.versiontracker.com/dyn/moreinfo/macosx/23659

Coversutra allows you to set your own shortcuts plus it's a great addon to have anyway.
